CHOCOLATE BROWNIES
Ingredients
250g unsalted butter
200g soft brown sugar
250g dark chocolate
4 eggs
4 tablespoons plain flour
4 tablespoons cocoa powder
½ teaspoon baking powder
salt
Method
Preheat the oven to 180 (350 deg ) Gas mark 4
Grease a 20 cm square tin.
Beat the butter and sugar together until light and fluffy
Chop the chocolate and set 3 tablespoons aside. Melt the remainder in the microwave.
Beat the eggs lightly and add to the butter/sugar mixture.
Pour in the melted chocolate and reserved chocolate pieces.
Sift the flour, cocoa, baking powder and a generous pinch of salt.
Fold into the chocolate mixture gently.
Pour into the cake tin and bake for about 30 minutes (the outside edges should be shrinking away from the tin, while the centre should be springy.
Leave to cool, then cut into squares.
